Costa Rica is famous as a coffee producing region in Central America. The Tarrazu region is known as the best producing region in the country. Don Oscar is a person's name, but it is the name of the bean refining plant, Don Oscar Mill. The mill is run by two brothers. They named the farm after their father, who inherited it.
Don Oscar owns 15 farm plots, and El Coyote is one of them, run by a highly experienced craftsman. Although they faced difficulties such as labor shortages due to the COVID-19 pandemic, they were ultimately able to produce beans of a satisfactory quality.
It's a very long name, but Villalobos refers to the variety of beans and RH refers to the red honey that has been refined. The honey process is very popular in Central and South America, but by further subdividing it and drying it with a little of the pulp still left in, you can enjoy the flavor of Villalobos to the fullest.
The flavors you'll be interested in are lychee, pear, and white wine, with a refined sourness. We recommend a light roast.
The production volume of these beans is low, and our store only receives a small amount at certain times. If you are interested, please give them a try.
Roaster's comment: This is a red honey bean, one of the subdivisions of the honey process. Even the raw beans have a unique aroma. This is probably due to the fermentation, but I think you can enjoy the fermented acidity of lychee and other flavors. It doesn't have a super distinctive flavor like anaerobic, so it's recommended as an introduction to fermented coffee.

Roasting Lab Shipping Schedule
Estimated shipping date
Coffee beans: Orders placed before noon will be roasted on the same day and shipped the next day. Orders placed in the afternoon will be roasted on the next business day depending on the timing.
Equipment, coffee beans, books, etc.: Same-day shipping available.
Scheduled roasting days: Our roasting schedule is usually on Tuesdays, Wednesdays, and Thursdays.
Although I sometimes forget to update the calendar, I am generally open and roasting on weekdays. I usually take special days off on Mondays and Fridays.
Long-term holidays will be announced in advance.
We will be closed from January 31st to February 3rd due to special events and business trips.

Roasted beans explained
Our roasted coffee is delivered in the order in which it was ordered. However, if we receive a large number of orders, you may have to wait. In that case, we will notify you of the expected delivery date in advance.
Delivery weight is roasted weight . For dark roast, it takes approximately 225g of green beans to produce 180g of roasted beans.
There are five levels of roast to choose from, with the main focus on city roast, with medium, high, city, full city and French equivalent.
Guide to choosing roast level
If you prefer a sour taste, we recommend something lighter than City, and if you prefer a bitter taste, we recommend something City or later.
The relationship between expiration date, flavor and aroma
Our roasted beans have a very dull flavor immediately after roasting, so we don't recommend it. A few days after roasting, the aroma and flavor become stronger, peaking after about a week, then gradually decreasing after about a month, but we have confirmed that they are still delicious even after two months.
Dark roasted beans in particular have oils that oxidize, so after a few months they may develop a unique spicy aroma, but this aroma becomes less noticeable once the coffee is extracted.
Please enjoy the change in flavor that occurs over the course of several days.
*The expiration date is 3 months from the roasting date, but we recommend consuming it as soon as possible.
*The top surface of the package has been treated to release gas. This part will be discarded when opening the package, but the zipper ensures airtightness.

Our coffee division techniques
Our coffee is packaged in small bags of 90g to 100g each. For individual customers, even if you purchase 1kg, we will deliver 10 bags of 100g each. Packing the beans takes time and effort, and naturally the cost is higher.
But this subdivision actually has many benefits.
1: Freeze any portion you won't drink right away.
If you purchase 180g, you will receive two 90g packages. I think you can drink 90g in about a week. The remaining 90g will be stored unopened for a while, so try storing it in the freezer. Freezing coffee beans can prevent the flavor from changing . For example, if you feel that the coffee tastes great about a week after you receive it, try storing it at room temperature for a week and then putting it in the freezer. This will keep the flavor intact.
If you use the freezer in the same way with 10 bags, even if it will take a month to drink them all, you can keep the flavor for a long time by taking one bag out of the freezer at a time .
There is no problem with grinding frozen beans while they are still frozen. In fact, it is recommended to grind them as it prevents condensation when thawing. Therefore, it is also effective to grind the frozen beans in small portions, just as much as you will need .
2: Share with your friends
Our coffee is designed with the theme of "shareable." The standard package contains two coffees, with the idea that it is easy to share the enjoyment with someone .
If you want to share something with your partner, such as "This coffee was delicious, so please try it," please make use of the other package. You can also have one for home and one for work .
The packaging we use is made of gas-barrier material, has a resealable zipper, and is self-supporting. It's a little pricey, but it's enough for storing about 90g of coffee without having to prepare a coffee canister. After use, roll it up and throw it away as burnable garbage (depending on the local government, it may be treated as plastic garbage).
Naturally, our packaging looks good and is easy to use, but it is also easy to throw away.
