Honey process is also called pulped natural. It is a refining method that is somewhere between natural and washed, in which the beans are dehulled to a certain extent, dried, and then washed with water.

Therefore, many of the beans have both the strong flavor of natural and the cleanness of washed coffee. Honey process is subdivided into various categories depending on the degree of threshing and drying, and each farm has its own unique method, such as fermentation or coating the beans with fruit from another bean before drying.
