We have prepared the signature Pacamala from El Injerto, a representative farm in Guatemala. Our store sells natural Pacamala. When it comes to El Injerto Pacamala, the washed version is popular and has already sold out at the dealership. The natural version is relatively unpopular and expensive. The reason for its unpopularity is that natural processed Pacamala is rarely available in the first place, so roasters choose the washed version, which they are accustomed to handling.

Apparently, the Pacamara beans were originally grown in El Salvador, and the farm owner purchased them, but at the time the flavor of these beans was not very highly regarded.
Times have changed and Pacamara is now considered one of the luxury beans alongside Geisha.

These beans are grown in the Patagonia section, which is the highest altitude in El Injerto Farm. The Pacamara, which made El Injerto famous, was grown in a different section, but the flavor is said to be getting richer every year as the years of cultivation continue in the new section. I would like to purchase this again next year.

Enough of the preamble, let's take a look at what the roaster has to say about the taste.

Roaster's comment: The purchase price was 5 kg per kilo, which made the roasting process quite stressful. The aroma of the raw beans was exotic and spicy. It left a very mysterious impression.
The beans are light to medium roasted, with an emphasis on sweetness using our standard profile, resulting in a strong, characteristically winey aroma. The winey aroma is a combination of dark grapes (Kyoho, Pione, Nagano Purple, etc.) and fermented aromas. The mouthfeel is a little light but clean, with a long aftertaste. As it cools down, the winey flavor becomes even more pronounced, making it a bean that can be enjoyed for a long time at various temperatures. The moment you smell the aroma, you'll feel your expectations rising, thinking, "Wow! This is going to be amazing!"
The price is surprisingly high, but by normal calculation it would come to around 8,800 yen, so it's a bit of a bargain.
The Omakase roast is lightly roasted, with a slight heat, to bring out the acidity while still bringing out the winey flavor.

Roasting Lab Shipping Schedule

Estimated shipping date

Coffee beans: Orders placed before noon will be roasted on the same day and shipped the next day. Orders placed in the afternoon will be roasted on the next business day depending on the timing.

Equipment, coffee beans, books, etc.: Same-day shipping available.

Scheduled roasting days: Our roasting schedule is usually on Tuesdays, Wednesdays, and Thursdays.
Although I sometimes forget to update the calendar, I am generally open and roasting on weekdays. I usually take special days off on Mondays and Fridays.
Long-term holidays will be announced in advance.

We will be closed from January 31st to February 3rd due to special events and business trips.




Roasted beans explained

Our roasted coffee is delivered in the order in which it was ordered. However, if we receive a large number of orders, you may have to wait. In that case, we will notify you of the expected delivery date in advance.

Delivery weight is roasted weight . For dark roast, it takes approximately 225g of green beans to produce 180g of roasted beans.

There are five levels of roast to choose from, with the main focus on city roast, with medium, high, city, full city and French equivalent.

If you prefer a sour taste, we recommend something lighter than City, and if you prefer a bitter taste, we recommend something City or later.

The relationship between expiration date, flavor and aroma

Our roasted beans have a very dull flavor immediately after roasting, so we don't recommend it. A few days after roasting, the aroma and flavor become stronger, peaking after about a week, then gradually decreasing after about a month, but we have confirmed that they are still delicious even after two months.

Dark roasted beans in particular have oils that oxidize, so after a few months they may develop a unique spicy aroma, but this aroma becomes less noticeable once the coffee is extracted.

Please enjoy the change in flavor that occurs over the course of several days.

*The expiration date is 3 months from the roasting date, but we recommend consuming it as soon as possible.

*The top surface of the package has been treated to release gas. This part will be discarded when opening the package, but the zipper ensures airtightness.

*Due to packaging size, we will ship two 90g packages. You can share with your friends or acquaintances.

*If you purchase multiple items, they will be delivered in multiple packages.

*Please note that the roasting level is based on our own standards, so some customers may find it too dark or too light.

Our coffee division techniques

Our coffee is packaged in small bags of 90g to 100g each. For individual customers, even if you purchase 1kg, we will deliver 10 bags of 100g each. Packing the beans takes time and effort, and naturally the cost is higher.

But this subdivision actually has many benefits.

1: Freeze any portion you won't drink right away.

If you purchase 180g, you will receive two 90g packages. I think you can drink 90g in about a week. The remaining 90g will be stored unopened for a while, so try storing it in the freezer. Freezing coffee beans can prevent the flavor from changing . For example, if you feel that the coffee tastes great about a week after you receive it, try storing it at room temperature for a week and then putting it in the freezer. This will keep the flavor intact.

If you use the freezer in the same way with 10 bags, even if it will take a month to drink them all, you can keep the flavor for a long time by taking one bag out of the freezer at a time .

There is no problem with grinding frozen beans while they are still frozen. In fact, it is recommended to grind them as it prevents condensation when thawing. Therefore, it is also effective to grind the frozen beans in small portions, just as much as you will need .

2: Share with your friends

Our coffee is designed with the theme of "shareable." The standard package contains two coffees, with the idea that it is easy to share the enjoyment with someone .
If you want to share something with your partner, such as "This coffee was delicious, so please try it," please make use of the other package. You can also have one for home and one for work .

The packaging we use is made of gas-barrier material, has a resealable zipper, and is self-supporting. It's a little pricey, but it's enough for storing about 90g of coffee without having to prepare a coffee canister. After use, roll it up and throw it away as burnable garbage (depending on the local government, it may be treated as plastic garbage).

Naturally, our packaging looks good and is easy to use, but it is also easy to throw away.
