We were extremely fortunate that Mr. Ando from Daily Portal, who is also a friend of the store manager, came to our lab for an unrelated matter and ended up interviewing us, which led to our article being published.

I understand the "sharpness" of coffee, but what is "richness"? 

When asked about the richness of coffee, he replies, "I don't know," which is typical of Daily Portal, but he pursues richness by making use of a variety of tools such as cupping foam and flavor wheels.

I think the fullness of the coffee itself has been concluded as a rich flavor, but I think the fullness of coffee is the result of expressing the body of the coffee in an easy-to-understand way for everyone. So, coffee with a full body has a multi-layered flavor. It's a little different from the fullness caused by fats and proteins.
