When to drink coffee

We are renewing our packaging, and we have decided to include a guide on when the beans are best consumed. However, this is a lot of work.

Generally, the expiration date for coffee beans is about 6 months after roasting , and for illy cans it is 24 months. I was surprised that the flavor could be maintained for 24 months, but I think it is because they use a so-called inert gas to prevent oxidation. Also, the expiration date becomes invalid once the product is opened, and I think there are instructions to use it up as soon as possible.

Our beans are not treated with inert gas, so we recommend that you consume them within six months. However, this only applies to whether the coffee can be drunk, and it is a different matter when it comes to whether the specialty coffee flavor will last. That is why we add the statement, " Please consume as soon as possible, regardless of opening or expiration date ."

So how does it taste?

This is also something that each store claims differently, so I think everyone is very confused. Some stores say it tastes best right after roasting, others say it tastes best after 3 days to a month, and I think there was even one store that said it tastes better within a week...

At our shop, we conduct sensory tests to ensure that the beans are delicious, and we have found that even beans that are over two months old are perfectly delicious . The flavor peaks after about one week. For some beans, it may be two to three weeks later. From there, the flavor gradually becomes milder and calms down, and lasts for about one to two months. After two months, the flavor becomes dull.

When freshly roasted beans come into contact with hot water, they release a lot of gas, causing the beans to expand. This is touted as proof of freshness, but just because roasted beans are fresh doesn't mean they taste good (at least in our opinion). As a store manager, I like to wait at least a few days after roasting.

The beans we sell weigh 180g, which is a size that can be consumed within a month, when the flavor is at its peak .

What are your general impressions of each period?

Immediately after roasting: It's drinkable but somehow light. The beans are swelling up.
About 3 days later: The aroma starts to emerge. It's delicious to drink.
About 1 week: The aroma and flavor are good. The beans will start to settle down.
About 1 month later: Still good. Maybe the sweetness will fade a bit?
About 2 months: The flavor becomes dull. It loses its individuality. Still, it's delicious on its own.

Also, I know this may sound confusing, but there are some unusual beans that reach their peak after being left for about a month. So, I hope you enjoy the change in flavor as well .

Just now, one of our staff members contacted us and said, "I tried some beans that were left for three months, and after about three months, a gentle sweetness like cotton candy spreads..." It may be that light roasting, which doesn't produce much fat, allows you to enjoy the beans for a longer period of time.
