What is the difference between the automatic roasting and roast degree instructions?

There are two ways to order roasting at our shop: you can choose from the roast levels we have available, or you can leave it to us to roast it for you.
However, even if you choose the option to have the beans roasted as ordered, the label will have a checkmark next to "C (which stands for city roast)." So, some people may wonder if the coffee will be roasted the same way if they specify a city roast.

However, the profiles of the coffee beans roasted to the specified roast level are different, and even if the beans are roasted to the same level, the flavors will be different.

If you choose to leave the bean description to us, we will be constantly updating it so that we can give you some idea of the level of roasting that the beans will receive.

In addition, when a repeat customer requests us to roast the beans for them, we roast them to the same specifications as the previous roast. Our coffee roasting is constantly updated through various trial and error, but we try not to change the taste of the beans we deliver to repeat customers.

So, when should you specify the roast level? This has the advantage that if you usually prefer city roast at other stores, you can order our beans with a similar roast level. You can also specify light or dark roast when ordering, so many customers choose this option.

So to summarise briefly:

Roasting by default: The beans are dropped (roasting is finished) at their best. Even if the recipe is updated, we will try to reproduce the previous roast as much as possible for repeat orders.

Designated roasting: The beans are roasted to different degrees based on their condition and temperature. Since recipes are updated from time to time, the taste may vary even if the same roast level is specified.

If you don't know what roast level you want, just choose the option that's right for you. If you like lighter or darker roasts, we recommend that you specify the roast level.
We are currently preparing a system that will allow for more detailed ordering, but the more flexible the ordering becomes, the further away it becomes from casual coffee service, so we are trying to find the right balance.

One of the benefits of roasting small quantities of coffee like ours is that we have the roaster all to ourselves. We will continue to make various updates so that everyone can enjoy this benefit.
